These gooey, tart lemon cookies are just my favorite little things! They are so simple and my go to recipe when I need something sweet and fast!
- 1 package of lemon cake mix
- 2 eggs
- 1/3 cup vegetable oil
- 1 teaspoon lemon extract
- 1/3 cup confectioners sugar
Step 1: Preheat oven to 375F
Step 2: Mix lemon cake mix, eggs, vegetable oil, lemon extract until well blended.
Step 3: Scoop some dough with spoon, doesn’t have to be a perfect ball, and toss in the confectioners sugar.
Step 4: Once sugared, place them on an ungreased baking sheet and bake for 6-9 min. Bottoms should be light brown and the inside should be chewy.
