An Italian classic, originally found in the Sopranos cook book.
This is what you’ll need:
- 1 lb penne pasta
- 1/4 lb thinly sliced prosciutto ham, chopped
- 28 oz diced tomatoes
- 1/4 cup vodka
- 1 tsp crushed red pepper
- 1 tbsp olive oil
- 1 tbs chopped garlic
- 1 cup heavy cream
- 1/2 cup parmesan cheese
Saute olive oil and garlic. Combine tomatoes, chopped prosciutto, vodka and crushed red pepper. Let simmer for 10 minutes on medium heat. I leave it uncovered. Start boiling water for pasta.
Add the heavy cream and half of the Parmesan cheese and cook for 2 minutes on LOW heat.
Mix penne and sauce together, while adding the rest of the Parmesan cheese throughout.
